Cottage Cheese Chocolate Cookies

350 degrees

cream 2 cups shortening
1 1/2 cup brown sugar (firmly packed)
2 cups white sugar
4 eggs
1 pint small curd cottage cheese
3 tsp vanilla
1 tsp burnt sugar flavoring
1/2 tsp butter flavoring.

Sift together
5 1/2 cups sifted flour
2 tsps baking powder
1 cup cocoa
1/2 tsp salt
stir in 1 cup nuts OR 1 1/2 tsp walnut flavoring.
add the flour mixture and chill overnight.
Roll into balls and roll ball in powdered sugar and place on greased cooky sheet. Then flatten with fork dipped in powdered sugar. Bake 10 minutes in 350 oven.
yield 10 dozen

these cookies are one of my favorite childhood memories, she'd bring them to picnics every summer. and they were SO good! I have never made them, though...the immense measurements and 10 dozen boggle my mind. I know it could be cut down....but I bet mine would never be as good as hers were....so chewy and soft and chocolately...and of course, healthy, since they contain cottage cheese! deb
