Green Chili Rice

2 cups Uncle Ben's Brown Rice
1 1/2 c water
1 can Cream of Celery Soup
Velveeta
12 oz sour cream
1 can chopped and peeled green chillies
1 lb. grated cheddar cheese

Mix all but velveeta in medium-sized casserole dish. BAke at 350 until melted, taking out periodically to stir. Place sliced velveeta on top of casserolle after melts in the oven (i.e. put velveeta on after rest melts and you remove the casserolle from the oven.)

Lisa's handwriting....this was the fabulous rice dish Tom brought to family dinners. Haven't tried this one yet either...but since Katie found these recipe cards cleaning kitchen cabinents....maybe that is an omen that the time has come!
